If I left it to my husband, he would eat them all, so I have had to hide most of them so that I still have some that I can use. For this article I thought I would explain how to make a Tomato sauce for a Pizza or Pasta.
What you will need is:
* 1 Tablespoon of Olive oil
* Some Cloves of garlic (1-3) depends on your taste
* A good hand full of Basil / or a mixture of Oregano, Marjoram and Basil
* 2 Onions
* 2 lbs (1.5kg) your own Plum tomatoes
* Salt and pepper
First of all, heat the olive oil on a low heat in a large heavy bottomed saucepan. I have actually got a large Wok which I know is for cooking Chinese, but it is brilliant as a general use saucepan.
Now add the chopped onions, make sure you stirr so that the onions are coated. Leave them to simmer slowly until translucent.
Add in garlic and turn through the onions. Leave for about 2 minutes.
Add the chopped fresh tomatoes. Stir through to cover with the oil and then leave for about five minutes over a low heat.
When the mixture is simmering add the chopped herbs.
Leave the sauce to simmer over a low heat until the tomatoes fall apart.
Simmer very gently for approximately an hour until the sauce has reduced and thickened. Make sure you stir to prevent it sticking.
